The Meaning Behind Our Name"Donku"
Creating a restaurant loved by the public for its deliciousness and affordability
After training at sushi restaurants and others, we opened in 2014
【Origin of the Name】
The name “Donku” means “frog” (kaeru/kawazu) in this region.
A proverb featuring frogs goes:
“A frog in a well knows not the vast ocean, yet knows the blue of the sky.”
Inspired by its meaning—“Even in a small world, delving deeply reveals its profound depth”
—we named it ‘Donku’ to embody our goal: “to hone our craft,
offer delicious food affordably, and build a restaurant cherished by the people.”
Additionally, “kaeru” (frog) carries our wish for customers' safe journeys home
and their joyful return to our restaurant.
“Welcome to Donku. Welcome back.”

Menue
<Fresh, Carefully Prepared Cuisine>
We source fresh local seafood directly from the market and showcase our skills
through sashimi, grilled dishes, and fried items.
Our sushi-style nigiri and salad rolls are also popular.
Especially our “White Tuna Roll” (a roll featuring white-fleshed yellowtail and
flathead) is a specialty only found in Nagasaki.
Our homemade “Steamed Fish Cake” is a labor-intensive, handmade creation
using generous amounts of fresh local fish (reservation required).
Responding to customer requests, we also recreate the Showa retro ”katsu don”
(pork cutlet rice bowl) directly taught by the owner of the renowned restaurant
“Dragon” (closed 2017).
We faithfully replicate its unique style: pork cutlet atop an egg rice bowl.
The cutlet has a light texture, finished with a mellow, donk-style flavor.
We strive to capture the nostalgic taste of the Showa era while evolving daily.
